I took the longest nap last night. As in nap, I mean a 3 hour nap after work. So I definitely wanted a very light dinner even though my stomach was growling. And of course, after a nap, I was groggy so I had to make something with what ever was in my fridge and pantry.

      

So here are the ingredients I threw together:

  • 1/2 package of Shiratake “noodles” - (20cal!)
  • 1/4 cup of broccoli
  • 1 egg
  • 1/2 of a small onion
  • 1/2 of a Chinese Soy Sauce Flavored Sausage
  • 1/4 cup firm tofu - cut into squares
  • 1/4 cup red bell peppers

With the help of the My Fitness Pal App, it inputted all of the ingredients and it came out to only 271 calories! Of course with the salt & pepper, there was a bit more sodium than I would like. I also used PAM spray instead of oil and 2 tbsp of water to help cook instead of using a cooking wine.

It all definitely came out a very hefty portion and the egg kept me full for the rest of the night.
